Meet Thomas Conroy, Our Tea Master

Thomas Conroy, our esteemed Tea Sommelier, brings a wealth of knowledge and passion to Ashford Castle. As the Supervisor in The Connaught Room and The Dungeon, Thomas has been an integral part of our team since October 2019. His journey with tea took a significant step forward in May 2022 when he travelled to Frankfurt to complete the prestigious Ronnefeldt Tea Master training. 

Thomas's love for tea is deeply rooted in his half-English and half-Irish heritage, cultures renowned for their appreciation of tea. He fondly recalls how he fell in love with the service and elegance of tea in The Connaught Room at Ashford Castle. According to Thomas, the exceptional quality of the tea leaves, particularly from Ronnefeldt, sets our tea apart. When asked to choose his favourite tea, Thomas likened it to picking a favourite child, but eventually revealed his top three: Morgentau, Granny's Garden and Irish Breakfast.
