Ashford Castle invites guests to discover Paula Pastry at The Drawing Room, an elegant haute pâtisserie experience created in collaboration with celebrated Paula Stakelum. Overlooking the estate lawns and the waters of Lough Corrib, The Drawing Room provides a refined setting for an afternoon shaped by seasonality, craft and a deep connection to the surrounding landscape.

Paula Pastry at The Drawing Room is a pâtisserie experience shaped by the estate’s ancient woodland and deep heritage, expressed through Paula’s distinctive storytelling. Crafted with wild botanicals and ingredients grown throughout the grounds, each creation is rooted in place, memory and meticulous craft, reimagining haute pâtisserie through the lens of the estate.

The experience begins with a refreshing estate-preserved crab apple iced tea, served alongside a freshly baked wild garlic sugar brioche. Guests are then presented with a selection of exquisite cakes, each thoughtfully created to showcase the botanicals and ingredients of the Ashford estate, interpreted through Paula’s distinctive approach to flavour and technique.

Signature creations such as Legend Chocolate with estate wood sorrel, dulce choux and strawberry with woodruff shortbread are served with a glass of Lanson Champagne, adding a celebratory touch to the experience. A beautifully wrapped Legend Chocolate snack bar is offered as a parting gift, extending the moment beyond the castle.

Available to both residents and non-residents, Paula Pastry at The Drawing Room offers a unique way to experience Ashford Castle through flavour, storytelling and place, complementing the castle’s long-standing Afternoon Tea tradition in the Connaught Room.

Paula Stakelum is the Global Director of Chocolate and Patisserie at Ashford Castle, and one of the creative forces shaping the Castle’s culinary soul.

With a deep love of storytelling, Paula believes every pastry should carry meaning as well as flavour. Her creations are guided by thoughtful food stories that connect people to craft, place and feeling, brought to life with the support of the exceptional team she works alongside at Ashford Castle.
