Nestled in the grounds of Ashford Estate stands a living piece of history: the last Guinness apple tree, planted over a century ago when the Guinness family called Ashford Castle home. Still bearing fruit today, this historic tree has inspired the 2026 Ashford Castle Easter Egg: a limited-edition chocolate masterpiece designed by Paula Stakelum, Global Director of Chocolate & Patisserie at Red Carnation Hotels. The creation pays tribute to the Castle’s living legacy and the craftsmanship that defines the estate. In keeping with Ashford Castle’s yearly Easter tradition, the 2026 Easter Egg is handcrafted using the estate’s exclusive Valrhona ‘Legend’ 55% milk chocolate. Inside, the egg is filled with 29% ‘Legacy’ milk chocolate shards: refined, textural pieces of chocolate with notes of roasted hazelnut that symbolise the tree’s bark. Each egg is meticulously hand-painted, with layered organic greens echoing the movement and depth of the apple tree’s leaves, delicately accented by deep red detailing to reflect the distinctive Guinness apples that continue to fruit each year. Speaking about the inspiration behind this year’s design, Paula Stakelum said: “Each year, we select a unique element of Ashford Castle to inspire our Easter egg. While I am surrounded by inspiration every day, the story behind this year’s egg is particularly meaningful. This century-old tree stands as a quiet symbol of heritage, land, and enduring care, values that are deeply reflected in our pastry craft.” Priced at €75, the 2026 Ashford Castle Easter Egg will be available to purchase exclusively at Mrs Tea’s Boutique, located on the Ashford Estate grounds.
