Our signature gin cocktails made with locally sourced ingredients from our 350-acre Ashford Estate and our limited-edition Ashford Castle Drumshanbo Gunpowder Gin offer the perfect way to celebrate World Gin Day this June.

 

Bea Tollman’s “Bea”keeper cocktail

This simple yet delicious cocktail can be made easily at home using a range of readily available ingredients, including honey, lime, and the optional addition of soda water for a long drink. Using our Ashford Castle Drumshanbo Gunpowder Irish Gin, purchasable here, promises an added taste of luxury.

Method: Shake and double strain

Ingredients:

  • 50ml Drumshanbo Gunpowder Irish Gin with Ashford Castle Estate honey and wood sorrel
  • 25ml fresh lime juice
  • 50ml Ashford Castle honey syrup (1:1 ratio)
  • Soda water 

Procedure: Shake all ingredients (excluding the soda water) with ice and strain into a chilled glass or top up with soda water if desirous of a tall drink.

Garnish: Skewered berries for tall drink or a lime twist for short drink.

 

Gin Blossoms

Sweet and refreshing, this cocktail is the perfect way to wind down after a summer’s day.

Method: Shake and double strain

Ingredients:

  • 50ml Drumshanbo Gunpowder Irish Gin with Ashford Castle Estate honey and wood sorrel
  • 10ml elderflower syrup
  • 10ml Ashford Castle honey syrup
  • 25ml lemon juice
  • 15ml yellow chartreuse
  • 15ml egg whites or aqua fava

Procedure: Shake all the ingredients with ice and strain into a chilled glass.

Garnish: Lemon twist and bee pollen.

Mead2Bee

As the oldest alcoholic beverage, legend and folklore has it that it was in the early years of Ireland that the word “honeymoon” originated when a newlywed couple would be gifted a month’s supply of mead to aid conception.

Method: Double shake and double strain

Ingredients:

  • 50ml Drumshanbo Gunpowder Irish Gin with Ashford Castle Estate honey and wood sorrel
  • 30ml Wild Atlantic Mead by Kinsale Mead Co.
  • 25ml Ashford Castle honey syrup
  • 20ml lemon juice
  • 10ml apple cider
  • 15ml egg whites or aqua fava

Procedure: Dry shake all ingredients first then shake with ice and strain into a chilled glass.

Garnish: Add an edible flower from the Ashford Castle Estate for added opulence.
