In need of Mother's Day inspiration? Treat your mum to this specially crafted cocktail. This recipe uses Glendalough Rose Gin created by Rodney Rooney (Master Distiller at Glendalough Distillery) to honour the passing of his beloved mother. Rooney used rose petals and botanicals from her garden.

Rose Garden cocktail

Ingredients:

  • 60ml Glendalough Rose Gin
  • 15ml fresh blood orange juice
  • 20ml freshly squeezed lime juice
  • 15ml homemade pink peppercorn garden tea syrup
  • 20ml Aquafava

Method

  1. Dry shake
  2. Shake
  3. Double strain!

Garden tea syrup

For the cocktail, 1:1 ratio

Ingredients: 

  • 4 bar spoons of granny’s garden tea
  • A cup of boiling hot water
  • A cup of white granulated sugar
  • Pink Peppercorn

Method

  1. Place the two bar-spoon of loose granny’s garden tea leaves in a biodegradable tea bag and let it sit and brew on a cup of hot boiling water for 8 minutes.
  2. Once brewed remove and discard the tea bag into the gardens as fertiliser
  3. In a saucepan pour the freshly brewed tea and add sugar, the rest of the loose garden tea leaves and add 2 - 3 twists of pink peppercorn from a pepper mill.
  4. Let it simmer and stir until all the sugar has melted.
  5. Let it cool down and fine strain syrup into a clean container.
