Join us for an intimate wine-tasting session with Head Sommelier Paul Fogerty, followed by a 5-course meal at Stanley's, created by Executive Head Chef Liam Finnegan and our Global Director of Chocolate and Pâtisserie, Paula Stakelum. The experience will be based on seasonal ingredients, ensuring a fresh and delightful culinary journey.

Wine tasting

Start your journey in the castle's historic wine cellars. Against a backdrop of soft candlelight, enjoy a glass of champagne followed by an intimate five-part wine pairing and perfectly crafted canapés. Guided by our talented Head Sommelier, Paul Fogerty, you'll discover the nuances of each bottle and the intricate interplay of flavours.

Dinner in Stanley's

Awaiting you in Stanley's is a delicious starter, followed by a fish and main course, cooked right in front of you by Executive Head Chef Liam Finnegan. Each dish features locally sourced produce and seasonal ingredients grown on the estate grounds by our Garden Manager Alex Lavarde and his team. To complement each course, a perfectly paired wine will be served, enhancing the flavours of your meal.

A chocolate delicacy for dessert

To conclude the evening, enjoy a decadent chocolate experience guided by Paula Stakelum, Global Director of Chocolate and Pâtisserie. Paula will prepare a palate-cleansing sorbet and an exquisite chocolate creation featuring seasonal flavours. The evening winds down with a selection of tea, coffee, and speciality herbal teas.
